Preparation of Chicken Base
- Place the whole chicken in a large pot and cover it with chicken broth. Simmer gently for 20-25 minutes.
- Remove the chicken, and set aside. Add onions, carrots, celery, thyme, parsley, and black pepper to the broth. Let it simmer for an hour.
Making Dumplings
- In a mixing bowl, combine flour, baking powder, and salt.
- Cut in butter until the mixture resembles coarse crumbs.
- Stir in milk until just combined. Do not overmix.
Cooking Chicken and Dumplings
- Once the broth is ready, drop spoonfuls of dumpling dough into the simmering broth.
- Cover and cook for 15-20 minutes, avoiding lifting the lid during cooking.
- In the last 5-10 minutes, add shredded chicken back into the pot.
- Taste and adjust seasoning, adding salt or pepper as needed before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat using stove, microwave, or oven.
