Ingredients
  

For the Chicken Base
  • 1 whole chicken A flavorful and tender chicken for the broth.
  • 4 cups chicken broth For poaching the chicken.
  • 1 medium onion, chopped Enhances the flavor of the broth.
  • 2 medium carrots, diced Adds sweetness and nutrition.
  • 2 stalks celery, diced Provides crunch and flavor.
For the Dumplings
  • 2 cups all-purpose flour Base for the dumpling dough.
  • 1 tbsp baking powder Leavening agent for fluffy dumplings.
  • 1 tsp salt Enhances flavor.
  • 1/4 cup butter (or shortening) Provides richness to the dumplings.
  • 3/4 cup milk Moistens the dumpling dough.
Seasonings
  • 2 tbsp fresh thyme, chopped Adds aromatic flavor.
  • 2 tbsp fresh parsley, chopped Adds freshness.
  • 1 tsp black pepper Adds a spicy kick.

Method
 

Preparation of Chicken Base
  1. Place the whole chicken in a large pot and cover it with chicken broth. Simmer gently for 20-25 minutes.
  2. Remove the chicken, and set aside. Add onions, carrots, celery, thyme, parsley, and black pepper to the broth. Let it simmer for an hour.
Making Dumplings
  1. In a mixing bowl, combine flour, baking powder, and salt.
  2. Cut in butter until the mixture resembles coarse crumbs.
  3. Stir in milk until just combined. Do not overmix.
Cooking Chicken and Dumplings
  1. Once the broth is ready, drop spoonfuls of dumpling dough into the simmering broth.
  2. Cover and cook for 15-20 minutes, avoiding lifting the lid during cooking.
  3. In the last 5-10 minutes, add shredded chicken back into the pot.
  4. Taste and adjust seasoning, adding salt or pepper as needed before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat using stove, microwave, or oven.
