  1. Cut the chicken into manageable pieces.
  2. Heat the cooking oil in a large pot over medium heat.

  2. This adds depth of flavor.
  3. Pour the soy sauce and vinegar over the chicken. Stir to combine and bring to a boil.
  4. Reduce the heat and let it simmer for about 15 minutes for the flavors to meld.
  5. Pour in the coconut milk, add the bay leaves, and incorporate the chili peppers.
  6. Let it simmer for an additional 20-30 minutes until the chicken is cooked through and tender.
  7. Season with salt and pepper to taste. Serve hot with steamed rice.

Notes

For a vegetarian version, substitute chicken for tofu or vegetables, adjusting the cooking time accordingly. Simmer longer for a richer flavor. Do not overcook the chicken to avoid toughness.
