Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, add the softened butter and granulated sugar. Beat them together using an electric mixer until light and fluffy—about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well combined and smooth.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt. Slowly add this mixture to your wet ingredients, mixing well without overmixing.
  5. Use a cookie scoop or tablespoon to drop portioned dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes until the edges are golden and the center remains soft.
  2. After baking, allow cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
