Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, beat the softened butter and 1.5 cups of granulated sugar together until light and fluffy—about 2-3 minutes.
  3. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract until well incorporated.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cream of tartar, and salt.
  5. Gradually add the dry mixture into the wet mixture, stirring until just combined.
  6. Spread the batter evenly in the prepared baking pan.
  7. In a small bowl, combine sugar and cinnamon. Sprinkle the mixture generously over the cookie batter.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
Cooling
  1. Allow the bars to cool in the pan before cutting them into squares.
