Preparation
  1. Cook the purple yam until tender, then allow it to cool slightly before mashing it into a smooth paste.
  2. In a bowl, combine the mashed purple yam, glutinous rice flour, sugar, and water. Mix until a smooth, thick batter forms, adjusting the consistency by adding a bit of water or glutinous rice flour as needed.
Cooking
  1. Transfer the mixture into a microwave-safe container or a steaming dish. Cover and microwave for about 2 minutes or steam for about 15 minutes until it becomes firm and chewy.
Shaping
  1. Once cooked, allow to cool slightly before dusting your work surface with cornstarch. Divide the dough into small pieces and shape them into balls or discs.
  2. Dust with additional cornstarch to prevent sticking, and enjoy your homemade Chewy Purple Yam Mochi!

Notes

For variations, you can use sweet potato or pumpkin. Be careful not to overcook the mochi, as it can become too chewy. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for longer storage.
