  • 1 cup pumpkin puree Ensure it's pure pumpkin puree.
  • 1 cup brown sugar Packed brown sugar is recommended.
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened Use unsalted butter for better flavor.
  • 1 large egg
  • 1 teaspoon vanilla extract Pure vanilla extract gives better flavor.
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 tablespoon pumpkin pie spice Can substitute with a mix of cinnamon, nutmeg, and clove.
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional) Add for extra sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Cream until light and fluffy.
  3. Add the pumpkin puree, egg, and vanilla extract to the mixture and mix well.
  4. In another bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. If using, fold in the chocolate chips.
Baking
  1. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between for spreading.
  2. Bake for 10-12 minutes, or until the edges are lightly golden.
Cooling
  1. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to one week in the refrigerator. They freeze beautifully for up to three months. Reheat in the microwave for 10-15 seconds to revive their soft, chewy texture.
