Preparation
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream Butter and Sugars: In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat until light and fluffy, about 2-3 minutes.
- Add Pumpkin and Eggs: Mix in the pumpkin puree and eggs, one at a time, ensuring well combined after each addition.
- Combine Dry Ingredients: In another bowl, whisk together flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt. Gradually mix with wet ingredients until just combined.
- Prepare for Baking: In a small bowl, mix 1/4 cup of sugar with 2 teaspoons of cinnamon for the coating.
- Shape the Cookies: Scoop cookie dough using a cookie scoop or tablespoon and roll each ball in the cinnamon sugar mixture.
- Bake: Place shaped cookie balls on the prepared baking sheet, leaving space in between. Bake for 10-12 minutes or until edges are golden.
- Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
