  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup pumpkin puree Pure pumpkin, not pumpkin pie filling.
  • 2 large eggs Room temperature.
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup cinnamon sugar (for rolling) Mix 1/4 cup sugar with 2 tsp cinnamon.

Preparation
  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat until light and fluffy, about 2-3 minutes.
  3. Add Pumpkin and Eggs: Mix in the pumpkin puree and eggs, one at a time, ensuring well combined after each addition.
  4. Combine Dry Ingredients: In another bowl, whisk together flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt. Gradually mix with wet ingredients until just combined.
  5. Prepare for Baking: In a small bowl, mix 1/4 cup of sugar with 2 teaspoons of cinnamon for the coating.
  6. Shape the Cookies: Scoop cookie dough using a cookie scoop or tablespoon and roll each ball in the cinnamon sugar mixture.
  7. Bake: Place shaped cookie balls on the prepared baking sheet, leaving space in between. Bake for 10-12 minutes or until edges are golden.
  8. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use room temperature ingredients for best results. Don't overmix to maintain chewyness. Store in airtight container at room temperature for up to a week.
