  • 1 cup creamy peanut butter Can be substituted with crunchy peanut butter for extra texture.
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar Can be reduced by half for less sweetness.
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups rolled oats
  • 1/2 cup chopped peanuts (optional) For extra crunch.
  • 1/2 cup chocolate chips (optional) For added sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat together the peanut butter, softened butter, brown sugar, and granulated sugar until creamy and smooth.
  3. Add the eggs and vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the rolled oats, along with any optional ingredients like chopped peanuts or chocolate chips.
  7. Scoop portions of dough onto the prepared baking sheet, spaced about 2 inches apart.
  8. Flatten each cookie slightly with a spoon or fork.
Baking
  1. Bake for 10-12 minutes until golden brown around the edges.
  2. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
