Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 2-3 minutes.
  3. Add in the lemon zest, fresh lemon juice, and eggs. Mix until combined.
  4. In another bowl, whisk together the flour, baking powder, salt, and baking soda. Gradually add this mixture to the wet ingredients, stirring until just combined.
Baking
  1. Use a cookie scoop or tablespoons to drop rounded dough balls onto lined baking sheets, spaced about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are lightly golden brown.
  3. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Final Touch
  1. Dust with powdered sugar before serving for an extra touch of sweetness.

Notes

For a thicker cookie, chill the dough for 30 minutes before baking. You can also add chopped nuts or white chocolate chips for variety. Store cookies in an airtight container for up to 5 days or freeze for up to 3 months.
