  • 1 box carrot cake mix Ensure it is Halal-compliant
  • 2 large eggs
  • 1/3 cup vegetable oil Can substitute with coconut oil
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1 cup chocolate chips Optional for added sweetness
  • 1/2 cup chopped nuts Optional for extra crunch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the carrot cake mix, eggs, vegetable oil, and vanilla extract. Stir until just blended.
  3. If using, gently fold in chocolate chips or chopped nuts.
  4. Drop generous spoonfuls of dough onto a baking sheet lined with parchment paper, ensuring space between each cookie.
Baking
  1. Bake for 10-12 minutes until edges are lightly golden.
  2. Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to 1 week or freeze for 2-3 months. Thaw at room temperature or reheat at 350°F for a few minutes.
