Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a large bowl, mash the 2 ripe bananas until smooth.
- Add 1 cup of oats, 1/4 cup of peanut butter, 1/4 cup of honey or maple syrup, 1/2 teaspoon of vanilla extract, 1/2 teaspoon of baking soda, and 1/2 teaspoon of cinnamon. Mix everything together until well combined.
- Optionally fold in chocolate chips or chopped nuts.
- Drop spoonfuls of the dough onto a lined baking sheet about 2 inches apart.
- Bake for about 10-12 minutes until the edges are lightly golden and the center appears set.
- Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack.
- Enjoy your freshly baked cookies warm, with milk or tea!
Notes
Store cookies in an airtight container at room temperature for 3-5 days. They freeze well for up to 3 months. Reheat in the microwave for a few seconds for a freshly baked taste.
