  • 2 pieces ripe bananas, mashed The riper the bananas, the sweeter the cookies.
  • 1 cup oats
  • 1/4 cup peanut butter Can substitute with sunflower seed butter for a nut-free option.
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • to taste chocolate chips or nuts (optional) Make sure they are Halal.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. In a large bowl, mash the 2 ripe bananas until smooth.
  3. Add 1 cup of oats, 1/4 cup of peanut butter, 1/4 cup of honey or maple syrup, 1/2 teaspoon of vanilla extract, 1/2 teaspoon of baking soda, and 1/2 teaspoon of cinnamon. Mix everything together until well combined.
  4. Optionally fold in chocolate chips or chopped nuts.
  5. Drop spoonfuls of the dough onto a lined baking sheet about 2 inches apart.
  6. Bake for about 10-12 minutes until the edges are lightly golden and the center appears set.
  7. Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack.
  8. Enjoy your freshly baked cookies warm, with milk or tea!

Notes

Store cookies in an airtight container at room temperature for 3-5 days. They freeze well for up to 3 months. Reheat in the microwave for a few seconds for a freshly baked taste.
