Preparation
- Place chopped cherries in a medium saucepan over low heat. Cook for about 5-7 minutes until soft and syrupy.
- In a mixing bowl, combine the cooked cherries, powdered sugar, and vanilla extract. Mix well until you get a smooth paste-like consistency.
Shaping and Coating
- Form bite-sized balls (about one inch in diameter) and place on a parchment-lined baking sheet. Freeze for about 20 minutes.
- Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each cherry ball into melted chocolate, allowing excess to drip off, then roll in cocoa powder to coat.
Setting and Serving
- Place coated truffles back on the parchment-lined baking sheet and refrigerate until chocolate is set, about 30 minutes.
