Ingredients
  

for the cherry filling
  • 1 cup fresh or frozen cherries, pitted and chopped Use fresh cherries for best results.
  • 1 cup powdered sugar Adjust for sweetness to taste.
  • 1 tablespoon vanilla extract
for coating and shaping
  • 1 cup semisweet chocolate chips Ensure to melt smoothly.
  • 1/4 cup unsweetened cocoa powder For rolling the truffles.
  • 1/2 cup almond flour Or finely ground nuts for added texture.

Method
 

Preparation
  1. Place chopped cherries in a medium saucepan over low heat. Cook for about 5-7 minutes until soft and syrupy.
  2. In a mixing bowl, combine the cooked cherries, powdered sugar, and vanilla extract. Mix well until you get a smooth paste-like consistency.
Shaping and Coating
  1. Form bite-sized balls (about one inch in diameter) and place on a parchment-lined baking sheet. Freeze for about 20 minutes.
  2. Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  3. Dip each cherry ball into melted chocolate, allowing excess to drip off, then roll in cocoa powder to coat.
Setting and Serving
  1. Place coated truffles back on the parchment-lined baking sheet and refrigerate until chocolate is set, about 30 minutes.

Notes

Store in an airtight container in the refrigerator for up to a week. They can be frozen for up to three months.
