  • 2 cups fresh cherries, pitted (or frozen)
  • 3 large eggs
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • Butter for greasing the baking dish
  • Powdered sugar for serving (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using fresh cherries, wash and pit them. If using frozen, thaw and drain excess liquid.
  3. Grease a baking dish with butter and spread the cherries evenly across the bottom.
  4. In a mixing bowl, whisk together the eggs, milk, sugar, vanilla, and salt until well combined. Gradually add in the flour, whisking until smooth.
  5. Pour the batter over the cherries in the dish.
Baking
  1. Bake in your preheated oven for 35-40 minutes, or until the top is puffed and lightly browned.
  2. Once done, let it cool slightly before serving. Dust with powdered sugar for a beautiful finish.

Notes

Cherry Clafoutis can be stored in the refrigerator for up to three days. Enjoy it warm, chilled, or with ice cream.
