Preparation
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, vegetable oil, eggs, and vanilla extract until well blended.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix!
- Gently fold in the cherries and chocolate chips, ensuring they are evenly distributed throughout the batter.
- Spoon the batter evenly into the prepared muffin cups, filling them about two-thirds full.
Baking
- Place the muffin tin in the preheated oven and bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack.
- Enjoy them warm or at room temperature!
Notes
Store muffins in an airtight container at room temperature for 2-3 days or freeze them for up to three months. Wrap each muffin individually in plastic wrap.
