Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well-blended.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Beat everything together on medium speed for about 2 minutes until smooth.
- Carefully stir in the boiling water.
- Gently fold in the chopped cherries and chocolate chips (if using).
Baking
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes, or until a toothpick comes out clean when inserted into the center.
- Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
This cake can be topped with whipped cream or powdered sugar. Store well-covered in the refrigerator for 4-5 days or freeze individual slices for up to 3 months.
