  • 1.75 cups all-purpose flour
  • 1.5 cups sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Helps create moisture in the cake.
  • 1 cup cherries (fresh or canned, pitted and chopped)
  • 0.5 cups chocolate chips (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well-blended.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Beat everything together on medium speed for about 2 minutes until smooth.
  4. Carefully stir in the boiling water.
  5. Gently fold in the chopped cherries and chocolate chips (if using).
Baking
  1. Pour the batter into a greased cake pan.
  2. Bake for 30-35 minutes, or until a toothpick comes out clean when inserted into the center.
  3. Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

This cake can be topped with whipped cream or powdered sugar. Store well-covered in the refrigerator for 4-5 days or freeze individual slices for up to 3 months.
