For the Cheesecake Filling
  • 1 Cup Cream Cheese (softened) This forms the base of your cheesecake filling.
  • ½ Cup Granulated Sugar Sweetens the cream cheese wonderfully.
  • 1 tsp Vanilla Extract Adds flavor depth (ensure it’s alcohol-free).
  • 1 Cup Cherry Pie Filling Go for a quality brand or homemade for the best taste.
For the Egg Rolls
  • 8 pieces Egg Roll Wrappers Make sure they’re fresh for the best texture.
  • Cooking Spray Non-stick cooking spray For a crispy texture.

Method
 

Preparation of the Cheesecake Filling
  1. In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix with an electric mixer until smooth and creamy.
Assembly of the Egg Rolls
  1. Place an egg roll wrapper on a flat surface with one corner pointing towards you. Spoon about 2 tablespoons of the cream cheese mixture and 1 tablespoon of cherry pie filling onto the center of the wrapper.
  2. Fold the bottom corner over the filling, then fold in the side corners. Roll away from you tightly to seal the egg roll. Use a little water to wet the edges to secure the wrap.
Cooking
  1. Preheat your air fryer to 350°F (175°C). Lightly spray the egg rolls with cooking spray.
  2. Cook in the air fryer for 8-10 minutes or until golden brown and crispy, flipping halfway through.
Serving
  1. Once they are done, let them cool slightly before serving. Dust with powdered sugar or drizzle with a glaze if desired. Enjoy the crispy, creamy delight!

Notes

Substitution Suggestions: If cream cheese isn’t your favorite, you can use mascarpone cheese for a smoother texture. Ensure the air fryer isn’t overcrowded to allow even cooking. Store leftover rolls in an airtight container for up to 3 days or freeze for 2 months. Reheat in the air fryer for about 5-7 minutes.
