Preparation of the Cheesecake Filling
- In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix with an electric mixer until smooth and creamy.
Assembly of the Egg Rolls
- Place an egg roll wrapper on a flat surface with one corner pointing towards you. Spoon about 2 tablespoons of the cream cheese mixture and 1 tablespoon of cherry pie filling onto the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the side corners. Roll away from you tightly to seal the egg roll. Use a little water to wet the edges to secure the wrap.
Cooking
- Preheat your air fryer to 350°F (175°C). Lightly spray the egg rolls with cooking spray.
- Cook in the air fryer for 8-10 minutes or until golden brown and crispy, flipping halfway through.
Serving
- Once they are done, let them cool slightly before serving. Dust with powdered sugar or drizzle with a glaze if desired. Enjoy the crispy, creamy delight!

Substitution Suggestions: If cream cheese isn’t your favorite, you can use mascarpone cheese for a smoother texture. Ensure the air fryer isn’t overcrowded to allow even cooking. Store leftover rolls in an airtight container for up to 3 days or freeze for 2 months. Reheat in the air fryer for about 5-7 minutes.
