Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a mixing bowl, combine flour, sugar, baking powder, and salt. Add in milk, vegetable oil, vanilla extract, and egg. Mix until just combined; it’s okay if there are a few lumps!
- In another bowl, beat the softened cream cheese with sugar, egg, and vanilla extract until smooth and creamy.
Baking
- Pour half of the cake batter into the greased pan, spreading it evenly.
- Next, add the cream cheese mixture, spreading it gently, then add the remaining cake batter on top.
- Finish with dollops of cherry pie filling.
- Place it in the oven and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
- Slice, serve, and enjoy!
Notes
Ensure cream cheese and egg are at room temperature before mixing. Don’t overmix the batter to keep the cake tender. Feel free to use different pie fillings like blueberries or peaches for variety. Store in an airtight container at room temperature for up to three days or freeze slices for up to three months.
