Ingredients
  

Main Ingredients
  • 2 medium zucchinis
  • 1 cup breadcrumbs (preferably whole wheat) for added fiber
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 2 large eggs
  • as needed olive oil cooking spray

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy clean-up.
  2. Wash and dry the zucchinis. Cut them into fry-shaped strips, about ½ inch thick. Pat them dry with a paper towel to absorb excess moisture.
  3. In a shallow bowl, whisk the two eggs. In another shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper.
Coating and Baking
  1. Dip each zucchini strip into the egg mixture, letting the excess drip off. Then, dredge the strip in the breadcrumb mixture, ensuring it's fully coated. Place each coated zucchini on the prepared baking sheet.
  2. Lightly spray the top of the zucchini fries with olive oil cooking spray. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through cooking.
Serving
  1. Remove from the oven and let them cool for a few minutes. Enjoy your Cheesy Zucchini Parmesan Fries warm, perhaps with marinara sauce for dipping!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 375°F (190°C) for about 10 minutes to regain crispiness. For longer storage, freeze them before baking and bake from frozen, adding a few extra minutes to the cooking time.
