Main Ingredients
  • 2 medium medium zucchinis, grated Make sure to squeeze out excess moisture.
  • 1 cup shredded mozzarella cheese Can substitute with any melty cheese.
  • 1/2 cup grated Parmesan cheese
  • 1 large large egg
  • 1/2 cup all-purpose flour Can be substituted with gluten-free flour.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional) For added heat.
  • 1 tablespoon olive oil For greasing the baking sheet.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or grease it lightly with olive oil.
  2. Grate the zucchinis and place them in a clean kitchen towel or cheesecloth. Squeeze out the excess moisture.
  3. In a mixing bowl, combine the grated zucchini, mozzarella cheese, Parmesan cheese, egg, flour, garlic powder, salt, black pepper, and red pepper flakes.
  4. Stir the mixture until well combined, achieving a thick yet workable consistency.
  5. Transfer the mixture onto the prepared baking sheet and press it into a rectangular shape about 1/2 inch thick. Cut into breadstick shapes but do not separate yet.
Baking
  1. Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the tops turn golden and crispy.
  2. Remove from the oven and cut through the breadsticks completely. Serve warm with marinara sauce or your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for about 10 minutes.
