  • 2 cups cooked pasta (your choice: penne, rotini, or elbow) Cook according to package directions until al dente.
  • 1 cup white cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded Reserve a little for topping.
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons flour To make a roux.
  • to taste salt and pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Breadcrumbs (optional for topping) Adds texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta according to package directions until al dente. Drain and set aside.
Making the Cheese Sauce
  1. In a medium saucepan, melt the butter over medium heat. Whisk in the flour to create a roux, stirring constantly for about 1-2 minutes until golden and bubbly.
  2. Gradually whisk in the milk, stirring until thickened and creamy, which takes about 4-5 minutes.
  3. Remove the saucepan from heat and stir in the white cheddar and mozzarella. Season with salt, pepper, garlic powder, onion powder, and paprika.
Combining and Baking
  1. In a large bowl, combine the cooked pasta and cheese sauce, mixing well.
  2. Transfer the mixture to a greased baking dish. If desired, sprinkle breadcrumbs and reserved cheese on top.
  3. Bake in the preheated oven for 20-25 minutes until the top is golden and bubbly.
  4. Allow to cool for a few minutes before serving.

Notes

This dish can be stored in the refrigerator for up to 3 days or frozen for up to a month. Reheat in the oven at 350°F (175°C) for about 20 minutes.
