Cheesy Spanish Rice Bake: A Hearty Delight for Family Dinners

When it comes to comforting and flavorful dinners, nothing quite compares to Cheesy Spanish Rice Bake! This dish is a harmonious blend of seasoned ground beef, vibrant bell peppers, zesty tomatoes, and, of course, loads of melted cheese. Ingredients
  

  • 1 box Rice-A-Roni Spanish Rice prepared as directed
  • 1 lb lean ground beef
  • 1 small onion chopped
  • 1/2 red bell pepper chopped
  • 1/2 green bell pepper chopped
  • 1 can Rotel diced tomatoes & green chilies
  • Salt pepper, and cumin to taste
  • 1 cup shredded sharp cheddar cheese plus extra for topping

Instructions
 

  • Prepare the Rice: Cook the Rice-A-Roni Spanish Rice according to the package instructions. Once done, set aside.
  • Cook the Meat & Veggies: In a large skillet, brown the ground beef over medium heat. Once browned, add the chopped onion, red bell pepper, and green bell pepper, cooking until the veggies are softened, about 5-7 minutes.
  • Season & Combine: Stir in the can of Rotel, along with salt, pepper, and cumin to taste. Add a sprinkle of cheddar cheese, creating that tempting gooeyness.
  • Assemble & Bake: In a greased baking dish, combine the prepared rice and the meat mixture. Top it all off with the remaining shredded cheese for that melty goodness.
  • Bake: Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until the cheese is melted and bubbly, forming a gorgeous golden crust.
