  • 2 cups sour cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cooked chicken (optional) Can be omitted for a vegetarian version.
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 tablespoon olive oil For greasing the baking dish.
  • 1/2 cup breadcrumbs For optional topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Boil a pot of water and cook the pasta until al dente according to package instructions. Drain and set it aside.
  3. In a large bowl, mix together the sour cream, shredded cheese, cooked chicken (if using), frozen vegetables, garlic powder, salt, and pepper until well combined.
  4. Gently fold the cooked pasta into the creamy mixture, ensuring every piece is coated well.
  5. Grease a casserole dish with olive oil.
  6. Pour the pasta mixture into the greased dish. If desired, sprinkle breadcrumbs over the top.
Baking
  1. Place the casserole in the oven and bake for 25-30 minutes, or until the cheese is melted and golden brown.
  2. Allow it to cool for a few minutes before serving.

Notes

Ingredient substitutions include Greek yogurt for sour cream. Monitor baking time as ovens may vary.
