- In a skillet over medium heat, add the olive oil. Once hot, add the sausage. Cook for about 5-7 minutes or until browned, stirring occasionally.
- While the sausage is cooking, crack the eggs into a bowl, and whisk until fully combined. Season with salt and pepper to taste.
- Push the cooked sausage to one side of the skillet, then pour the beaten eggs into the other side. Allow them to cook undisturbed for a minute, then stir gently until scrambled to your preferred texture.
- Sprinkle shredded cheese over the eggs and sausage. Allow the cheese to melt, creating a deliciously cheesy mixture.
- Lay out the tortillas and divide the sausage and egg mixture evenly among them. Wrap them tightly, tucking in the edges for a secure roll.
- Optionally, return the wraps to the skillet for about 1-2 minutes on each side to crisp them up a bit.

Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the microwave for 30-45 seconds or in a skillet over low heat. You can freeze individual wraps for up to a month; thaw overnight before reheating.
