  • 4 large large eggs
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1 cup sausage (either crumbled or sliced)
  • 4 large large flour tortillas
  • 1 tablespoon olive oil
  • to taste salt and pepper to taste

Preparation
  1. In a skillet over medium heat, add the olive oil. Once hot, add the sausage. Cook for about 5-7 minutes or until browned, stirring occasionally.
  2. While the sausage is cooking, crack the eggs into a bowl, and whisk until fully combined. Season with salt and pepper to taste.
  3. Push the cooked sausage to one side of the skillet, then pour the beaten eggs into the other side. Allow them to cook undisturbed for a minute, then stir gently until scrambled to your preferred texture.
  4. Sprinkle shredded cheese over the eggs and sausage. Allow the cheese to melt, creating a deliciously cheesy mixture.
  5. Lay out the tortillas and divide the sausage and egg mixture evenly among them. Wrap them tightly, tucking in the edges for a secure roll.
  6. Optionally, return the wraps to the skillet for about 1-2 minutes on each side to crisp them up a bit.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the microwave for 30-45 seconds or in a skillet over low heat. You can freeze individual wraps for up to a month; thaw overnight before reheating.
