Cheesy Ranch Potatoes and Smoked Sausage: A Comforting Delight

Ingredients
  

  • 2 pounds of potatoes Yukon Gold or red potatoes work great
  • 1 pound of smoked sausage or your choice of sausage
  • 1 cup of shredded cheddar cheese
  • 1 packet about 1 ounce of ranch seasoning mix
  • ½ cup of sour cream
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Method
 

  1. Prep the Potatoes: Begin by washing and dicing the potatoes into bite-sized cubes. Leave the skin on for extra texture and nutrition!
  2. Cook the Sausage: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the smoked sausage slices and sauté until browned, about 5-7 minutes. Remove the sausage and set aside.
  3. Boil the Potatoes: In a large pot, bring water to a boil. Add the diced potatoes and cook for about 10-12 minutes until fork-tender. Drain and set aside.
  4. Combine Ingredients: In the same skillet, combine the cooked potatoes, sautéed sausage, ranch seasoning, sour cream, and half of the cheddar cheese. Stir until everything is well coated.
  5. Melt the Cheese: Sprinkle the remaining cheddar cheese on top. Cover the skillet and cook on low heat for an additional 5 minutes, just until the cheese melts.
  6. Serve and Enjoy: Scoop out servings, garnish with green onions if desired, and enjoy your comforting dish!
