  • 2 pounds baby potatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/4 cup ranch dressing (ensure it’s halal-friendly)
  • 3 tablespoons olive oil
Seasoning Ingredients
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large mixing bowl, combine the potatoes with olive oil, ranch dressing, paprika, garlic powder, onion powder, salt, and pepper. Toss well to coat.
Cooking
  1. Spread the potatoes in a single layer on a baking sheet and roast for about 25 minutes, until golden brown and fork-tender.
  2. Sprinkle shredded cheddar cheese on top of the potatoes, then return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serving
  1. Remove potatoes from the oven, garnish with freshly chopped parsley if desired, and serve warm.

Notes

For substitutions, use a homemade herb mix with buttermilk or Greek yogurt in place of ranch dressing. Avoid overcrowding the baking sheet to maintain crispiness.
