Preparation
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large mixing bowl, combine the potatoes with olive oil, ranch dressing, paprika, garlic powder, onion powder, salt, and pepper. Toss well to coat.
Cooking
- Spread the potatoes in a single layer on a baking sheet and roast for about 25 minutes, until golden brown and fork-tender.
- Sprinkle shredded cheddar cheese on top of the potatoes, then return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serving
- Remove potatoes from the oven, garnish with freshly chopped parsley if desired, and serve warm.

For substitutions, use a homemade herb mix with buttermilk or Greek yogurt in place of ranch dressing. Avoid overcrowding the baking sheet to maintain crispiness.
