Preparation
  1. Preheat your grill or oven to 375°F (190°C).
  2. Tear off large pieces of aluminum foil for each packet (about 12x12 inches).
  3. Place one chicken breast in the center of each foil piece.
  4. Drizzle with olive oil and sprinkle ranch seasoning, salt, and pepper over the top.
  5. Scatter the mixed vegetables on top of the chicken and finish by sprinkling shredded cheese.
  6. Fold the foil carefully to create a sealed packet, ensuring no steam can escape.
Cooking
  1. Grill the packets for 20-25 minutes or bake in the oven for 25-30 minutes until the chicken is fully cooked.
  2. Carefully unwrap the packets and serve immediately for a delicious and hearty meal.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) until warmed through.
