Main Ingredients
  • 1 pound shrimp, peeled and deveined Use fresh shrimp for best flavor.
  • 2 cups cooked pasta (your choice)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese Divided into two parts for mixing and topping.
  • 1 cup cream of mushroom soup Can use any creamy soup.
  • 2 tablespoons Old Bay seasoning
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • optional fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add olive oil and sauté the shrimp until they turn pink, about 2-3 minutes. Remove from heat and set aside.
  3. In a large bowl, combine the cooked pasta, sour cream, cream of mushroom soup, Old Bay seasoning, and half of the shredded cheddar cheese. Mix well.
  4. Fold in the sautéed shrimp and season with salt and pepper to taste.
  5. Transfer the mixture into a greased baking dish and top with the remaining cheddar cheese.
  6. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.

Notes

Serve with a fresh garden salad and crusty bread or garlic knots. For added flavor, pair with a crisp white wine or lemon-lime soda. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
