- - 2 cups mashed potatoes leftover or freshly made
- - 2 large eggs
- - 1 cup shredded cheddar cheese or your favorite cheese
- - ¼ cup grated Parmesan cheese
- - 2 tbsp sour cream
- - 2 tbsp chopped green onions optional
- - 1 tsp garlic powder
- - ½ tsp onion powder
- - ½ tsp paprika
- - Salt and pepper to taste
**Preheat the Oven:**
- Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with non-stick cooking spray.
**Prepare the Mixture:**
