  • 2 cups corn (frozen or canned, drained well) If using frozen corn, thaw it before mixing. For canned corn, rinse and drain to avoid excess liquid.
  • 1 cup shredded cheddar cheese Feel free to experiment with other cheeses too!
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/4 cup melted butter (unsalted) Unsalted for a balanced flavor.
  • 1 box Jiffy corn muffin mix
  • to taste Salt and pepper Season to taste.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease your casserole dish lightly at the bottom for easy serving.
  2. In a large mixing bowl, combine the corn (whether frozen or canned), shredded cheddar cheese, sour cream, milk, and melted butter. Stir until thoroughly mixed.
  3. Add in the Jiffy corn muffin mix. Gently fold it into the mixture until just combined—don’t overmix!
  4. Season with salt and pepper to your taste. You can always start light and add more later if desired.
  5. Pour the mixture into the greased casserole dish and spread it evenly.
  6. Bake for 45 minutes, or until the top is golden brown and set. A toothpick inserted in the center should come out clean.
  7. Allow to cool slightly before serving. This helps the casserole hold its shape when you cut into it.
