Preparation
- Preheat your oven to 425°F (220°C).
- Roll out the refrigerated pizza dough on a lightly floured surface until it's about 1/4 inch thick.
- In a large mixing bowl, combine the shredded chicken, mozzarella cheese, pizza sauce, diced bell peppers, and sliced olives. Mix well and season with Italian seasoning to taste.
- Using a round cutter, cut the rolled dough into circles (about 4-5 inches in diameter).
- Place about 2 tablespoons of the filling onto one half of each dough circle. Be careful not to overfill!
- Fold the other half of the dough over the filling and press the edges firmly to seal. For an extra touch, you can crimp the edges with a fork.
- Place the pockets on a greased baking sheet and brush them lightly with olive oil for a golden finish.
- Bake the pockets in the preheated oven for about 15–20 minutes or until golden brown.
- Allow them to cool slightly before serving, and enjoy warm with an extra side of pizza sauce for dipping!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes to keep them crispy.
