- Start by bringing the chicken broth to a boil in a medium saucepan.
- Once boiling, add in the orzo pasta. Cook according to package instructions until al dente, about 8-10 minutes.
- In the last 3 minutes of cooking the orzo, add the broccoli florets.
- Once cooked, drain any excess liquid and return the mixture to the pot.
- Add in the shredded chicken, olive oil, and half of the shredded cheese. Stir well to combine.
- Season with salt and pepper to taste.
- Transfer the mixture to a baking dish and sprinkle the remaining cheese on top.
- Place under the broiler for a few minutes until the cheese is melted and bubbly.
- Remove from the oven and let it cool slightly. Serve warm.
Notes
For extra vegetables, consider adding peas or spinach. Be mindful of cooking times to avoid overcooking the orzo, which can lead to a mushy texture. To prevent a gluey texture, stir gently after adding cheese.
