Ingredients

  • 1 large head of cauliflower cut into florets
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese
  • 1 cup of shredded mozzarella cheese
  • 2 cloves of garlic minced
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of paprika optional
  • Fresh parsley for garnish optional

Instructions

  • Preheat the Oven: Begin by preheating your oven to 375°F (190°C).
  • Blanch the Cauliflower: In a large pot, bring water to a boil. Once boiling, add a pinch of salt and blanch the cauliflower florets for about 5 minutes. Drain and set aside.
  • Make the Alfredo Sauce: In a medium saucepan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add Cream and Cheese: Pour in the heavy cream, then gradually stir in the Parmesan cheese until melted and smooth. Season with salt, pepper, and paprika if using.
  • Combine Cauliflower and Sauce: In a baking dish, combine the blanched cauliflower and Alfredo sauce, ensuring the florets are evenly coated.
  • Top with Cheese: Sprinkle the mozzarella cheese generously over the top of the dish.
  • Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the top is golden and bubbly.
  • Garnish and Serve: Remove from the oven, garnish with fresh parsley if desired, and serve hot!
