Preparation
- In a skillet over medium heat, add 1 tablespoon of oil. Once hot, add the diced onions, bell pepper, and garlic. Sauté until they soften, about 3-4 minutes.
- Add the ground beef and taco seasoning, cooking until the beef is no longer pink. Drain any excess fat and set aside.
Assembly & Cooking
- In the same skillet, add another tablespoon of oil. Place a tortilla in the skillet, and sprinkle half of it with cheese.
- Add a generous portion of the beef mixture on top, then sprinkle more cheese on top before folding the tortilla over to create a half-moon shape.
- Cook for about 2-3 minutes on each side or until the tortilla is golden brown and the cheese has melted. Repeat this process until all tortillas are filled and cooked.
- Cut each quesadilla into wedges and serve hot with your choice of toppings like salsa, sour cream, or guacamole.

For perfect quesadillas, avoid over-stuffing, ensure your skillet is hot, and consider various proteins or vegetables.
