Method
Cooking the Beef
- In a large skillet over medium heat, add a drizzle of olive oil and the chopped onion. Sauté for about 2-3 minutes until the onion is translucent.
- Add the ground beef and cook until it's browned, breaking it apart with a wooden spoon (around 5-7 minutes). Drain any excess fat if needed.
Seasoning and Adding Sauce
- Once the beef is cooked, add the minced garlic, taco seasoning, salt, and pepper. Stir well to combine.
- Pour in the enchilada sauce over the beef and mix well. Let the mixture simmer for about 5 minutes.
Cooking Tortellini
- Meanwhile, in a separate pot, cook the cheese tortellini according to package instructions. Once done, drain it and gently fold it into the beef mixture.
Finishing Touches
- Sprinkle half of the shredded cheese into the mixture and mix until it's melted and creamy.
- Pour everything into a greased baking dish and top with the remaining cheese.
- Preheat your oven to 350°F (175°C) and bake for about 15 minutes until the cheese is bubbly and golden.
- Remove from the oven, garnish with fresh cilantro, and enjoy!
Notes
Leftover Cheesy Beef Enchilada Tortellini can be stored for up to 3 days in an airtight container. It can be reheated in the microwave or oven. This dish can also be frozen for future enjoyment.
