Cheesy Beef Enchilada Tortellini

Ingredients
  

Main Ingredients
  • 1 pound ground beef You can swap with ground turkey or chicken.
  • 1 package cheese tortellini (9 oz, fresh or frozen)
  • 1 can enchilada sauce (10 oz)
  • 1 cup shredded cheese (cheddar and Monterey Jack blend) Experiment with cheese blends for different flavors.
  • 1/2 cup chopped onion
  • 1 teaspoon minced garlic
  • 1 teaspoon taco seasoning
  • to taste salt and pepper
  • to garnish fresh cilantro

Method
 

Cooking the Beef
  1. In a large skillet over medium heat, add a drizzle of olive oil and the chopped onion. Sauté for about 2-3 minutes until the onion is translucent.
  2. Add the ground beef and cook until it's browned, breaking it apart with a wooden spoon (around 5-7 minutes). Drain any excess fat if needed.
Seasoning and Adding Sauce
  1. Once the beef is cooked, add the minced garlic, taco seasoning, salt, and pepper. Stir well to combine.
  2. Pour in the enchilada sauce over the beef and mix well. Let the mixture simmer for about 5 minutes.
Cooking Tortellini
  1. Meanwhile, in a separate pot, cook the cheese tortellini according to package instructions. Once done, drain it and gently fold it into the beef mixture.
Finishing Touches
  1. Sprinkle half of the shredded cheese into the mixture and mix until it's melted and creamy.
  2. Pour everything into a greased baking dish and top with the remaining cheese.
  3. Preheat your oven to 350°F (175°C) and bake for about 15 minutes until the cheese is bubbly and golden.
  4. Remove from the oven, garnish with fresh cilantro, and enjoy!

Notes

Leftover Cheesy Beef Enchilada Tortellini can be stored for up to 3 days in an airtight container. It can be reheated in the microwave or oven. This dish can also be frozen for future enjoyment.
