- In a large pot, over medium-high heat, add the ground beef. Cook until it’s browned, which should take about 5-7 minutes. Be sure to break up any large clumps.
- Once the beef is browned, stir in the chopped onion, cooking for another 3-4 minutes until the onion becomes translucent and fragrant.
- Now, it’s time to add the diced potatoes. Stir them into the mix, allowing them to mingle for about 1-2 minutes.
- Add the beef broth and bring the mixture to a boil. Reduce the heat to a simmer, cover the pot, and allow everything to cook for around 15 minutes, or until the potatoes are fork-tender.
- After the potatoes are tender, lower the heat. Stir in the milk and cheese until everything is melted together. Season with salt and pepper to taste.
- Ladle your warm soup into bowls, garnishing with chopped green onions if desired. Sit back, take a deep breath, and enjoy every comforting bite!
Notes
Feel free to switch up the cheese! Try gouda or mozzarella for a different spin, but ensure any cheese you use is Halal compliant. After cooking, allow the soup to cool fully before storing it in an airtight container. Refrigerate for up to 3 days or freeze for up to 3 months. Reheat gently on the stove, adding a splash of milk if needed.
