Ingredients
  

  • 1 lb. cheese-filled tortellini
  • 1 cup thinly sliced beef like sirloin or roast beef
  • 1 bell pepper thinly sliced
  • 1 small onion sliced
  • 2 cloves garlic minced
  • 1 cup provolone cheese shredded
  • ½ cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Cook the Tortellini: Start by bringing a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually about 3-5 minutes. Drain and set aside.
  • Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion. Sauté until softened—about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  • Brown the Beef: Push the veggies to the side of the skillet and add the thinly sliced beef. Season with salt and pepper, and cook until browned and cooked through, approximately 5 minutes.
  • Make the Sauce: Reduce the heat, and stir in the heavy cream. Gradually add in the shredded provolone cheese while stirring until the cheese is melted and the sauce is smooth.
  • Combine Everything: Add the cooked tortellini to the skillet and toss until well-coated in the creamy sauce. Cook for an additional 2-3 minutes to heat through.
  • Serve and Garnish: Serve immediately, garnished with fresh parsley for a pop of color.
