  • 1 lb. cheese-filled tortellini
  • 1 cup thinly sliced beef like sirloin or roast beef
  • 1 bell pepper thinly sliced
  • 1 small onion sliced
  • 2 cloves garlic minced
  • 1 cup provolone cheese shredded
  • ½ cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Cook the Tortellini: Start by bringing a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually about 3-5 minutes. Drain and set aside.
  2. Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion. Sauté until softened—about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  3. Brown the Beef: Push the veggies to the side of the skillet and add the thinly sliced beef. Season with salt and pepper, and cook until browned and cooked through, approximately 5 minutes.
  4. Make the Sauce: Reduce the heat, and stir in the heavy cream. Gradually add in the shredded provolone cheese while stirring until the cheese is melted and the sauce is smooth.
  5. Combine Everything: Add the cooked tortellini to the skillet and toss until well-coated in the creamy sauce. Cook for an additional 2-3 minutes to heat through.
  6. Serve and Garnish: Serve immediately, garnished with fresh parsley for a pop of color.
