Ingredients
  

  • 2 cups chocolate crackers – crushed for the crust
  • 1/4 cup unsalted butter melted
  • 3 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup cocoa powder
  • 1/2 cup cherry pie filling
  • 1/2 cup fresh cherries optional, for decoration
  • 1/2 cup chocolate chips
  • 2 tablespoons heavy cream

Instructions
 

  • Prepare the Crust: Preheat the oven to 325°F (163°C). In a bowl, mix the crushed chocolate crackers with the melted butter until well combined. Press this mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Allow to cool.
  • Make the Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar until creamy. Add the eggs one by one, ensuring they are well mixed after each addition. Stir in the cocoa powder and mix until fully incorporated.
  • Bake the Cheesecake: Pour the cheesecake mixture over the cooled crust. Bake for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for an additional hour.
  • Chill: Once cooled, transfer the cheesecake to the refrigerator for at least 4 hours or overnight for the best flavor and texture.
