Method
 

Preparation
  1. In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Refrigerate the cheesecake filling for about 15 minutes.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the mixture, mixing until combined.
  5. Gradually incorporate the dry ingredients into the wet mixture, then fold in the chocolate chips.
Assembly
  1. Preheat your oven to 350°F (175°C).
  2. Using a cookie scoop, place a spoonful of cookie dough on a baking sheet lined with parchment paper.
  3. Make an indentation in the center and add a teaspoon of the cheesecake filling.
  4. Top with another spoonful of cookie dough, sealing the filling completely.
Baking
  1. Bake for 10-12 minutes or until the edges are golden brown and the center is set.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
