  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cups frozen diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • Salt and pepper to taste

Method
 

Cooking the Beef
  1. In a large skillet, over medium heat, cook the ground beef and chopped onion together until the beef is browned and the onion is tender. Use a spatula to break apart the beef into small pieces as it cooks.
Add Potatoes
  1. Once the beef is cooked, toss in the frozen diced potatoes. Stir to combine them well with the beef and allow them to cook for about 2-3 minutes.
Create the Flavor Base
  1. Pour in the beef broth, ketchup, and mustard. Stir everything up, making sure the potatoes are well incorporated, and bring the mixture to a boil.
Simmer
  1. Reduce the heat to low and let it simmer for about 15-20 minutes or until the potatoes are cooked through and tender.
Cheese It Up
  1. Once the potatoes are tender, sprinkle the shredded cheddar cheese evenly over the top, cover it with a lid, and allow it to cook for an additional 1-2 minutes until the cheese is melted.
Season and Serve
  1. Before serving, give it a good mix, and season with salt and pepper to taste. For an added touch, serve with optional toppings like pickles and lettuce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a skillet over medium heat until warmed through, or microwave in individual portions until hot. Can be frozen for up to 2 months in a freezer-safe container.
