Ingredients
  

For the Dough
  • 2 cups all-purpose flour
  • 1 tsp active dry yeast
  • 1 tsp salt
  • 3/4 cup warm water Water should be warm to activate the yeast.
For the Filling
  • 1 cup shredded cheese (mozzarella, cheddar, or your favorite) Use your preferred cheese for the filling.
For Cooking
  • 1 tbsp olive oil Optional, for frying.

Method
 

Preparation
  1. In a mixing bowl, combine the flour, yeast, and salt.
  2. Gradually add warm water until a soft dough forms. Knead for about 5 minutes until smooth.
  3. Cover the dough with a clean kitchen towel and let it rise in a warm place for about 15-20 minutes until it doubles in size.
  4. Once risen, punch the dough down and divide it into equal-sized balls.
  5. Roll each ball out into a flat circle, about 1/4 inch thick.
  6. Place a handful of shredded cheese in the center of each circle, leaving space around the edges.
  7. Fold the edges over the cheese to create a pouch, ensuring the filling is completely enclosed.
Cooking
  1. Heat a skillet over medium heat. Add a little olive oil if desired.
  2. Cook each flatbread for about 2-3 minutes on each side until golden brown and the cheese is melted.
Serving
  1. Remove from the skillet and enjoy your Cheese Stuffed Flatbread warm!

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. To reheat, pop them in a skillet over low heat until warmed through. Can freeze for up to 2 months, thaw overnight in the fridge before reheating.
