Preparation
- Set up your steaming pot with water and bring it to a gentle boil.
- In a large bowl, whisk together the all-purpose flour, rice flour, sugar, baking powder, and salt until thoroughly combined.
- In a separate bowl, mix the coconut milk and water.
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until a smooth batter forms.
- Fold in the shredded cheese, mixing until evenly distributed in the batter.
- Pour the batter into prepared molds about halfway full. Optionally, place a slice of cheese on top of each.
Cooking
- Place the molds in the steamer and cover. Steam for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow the cakes to cool slightly before removing them from the molds. Serve warm and enjoy!

Using high-quality cheese enhances the flavor. Avoid overmixing to maintain a light texture. Store leftovers in an airtight container for up to 3-4 days. For longer storage, freeze wrapped in plastic wrap.
