  • 1 cup all-purpose flour
  • 1 cup rice flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup coconut milk
  • 1/2 cup water
Cheese
  • 1/4 cup shredded cheese (like cheddar or queso blanco) for the batter
  • Cheese slices for topping optional

Method
 

Preparation
  1. Set up your steaming pot with water and bring it to a gentle boil.
  2. In a large bowl, whisk together the all-purpose flour, rice flour, sugar, baking powder, and salt until thoroughly combined.
  3. In a separate bowl, mix the coconut milk and water.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring gently until a smooth batter forms.
  5. Fold in the shredded cheese, mixing until evenly distributed in the batter.
  6. Pour the batter into prepared molds about halfway full. Optionally, place a slice of cheese on top of each.
Cooking
  1. Place the molds in the steamer and cover. Steam for 20-25 minutes or until a toothpick inserted comes out clean.
  2. Allow the cakes to cool slightly before removing them from the molds. Serve warm and enjoy!

Notes

Using high-quality cheese enhances the flavor. Avoid overmixing to maintain a light texture. Store leftovers in an airtight container for up to 3-4 days. For longer storage, freeze wrapped in plastic wrap.
