  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
Filling Ingredients
  • 1 cup favorite cheese (feta, mozzarella, or a mix)
  • 1 piece egg (for egg wash) Beaten

Method
 

Preparation of Dough
  1. In a large bowl, mix the flour, salt, sugar, and baking powder. Gradually add the warm water and olive oil, mixing until a dough forms. Knead the dough for about 5 minutes until it's smooth. Cover and let it rest for 15 minutes.
Preparation of Filling
  1. In a bowl, combine your cheese choice. Feel free to add herbs or spices to the cheese to enhance the flavor!
Shaping Pastries
  1. Divide the dough into small balls. Roll each ball into a circle about 5 inches in diameter. Place a spoonful of the cheese mixture on one half of the circle, fold the other half over, and pinch the edges to seal.
Baking
  1. Preheat your oven to 400°F (200°C). Place the stuffed fatayer on a baking sheet lined with parchment paper. Brush the tops with beaten egg for a beautiful golden color. Bake for about 20-30 minutes or until they are puffy and golden brown.
Serving
  1. Take your cheese fatayer out of the oven, let them cool slightly, and then dig in!

Notes

To achieve perfection, ensure the dough isn't too sticky by adjusting the flour as needed. Mix different cheeses for a better texture and flavor. Seal the edges well to prevent leaking during baking. Experiment with flavors by adding herbs like dill or oregano.
