Ingredients
  

Main Ingredients
  • 2 cups cooked chicken, shredded Use rotisserie chicken for speed!
  • 1 cup shredded cheese Cheddar or Mexican blend works great.
  • 8 pieces taco shells Soft or hard shells can be used.
Seasoning and Toppings
  • 1 tablespoon taco seasoning
  • 1/2 cup diced tomatoes
  • 1/2 cup diced bell peppers
  • 1/4 cup sliced olives
  • 1/4 cup sour cream
  • to taste Fresh cilantro For garnish.

Method
 

Preparation
  1. In a large skillet over medium heat, add your shredded chicken and taco seasoning. Mix well and warm up the chicken until heated through.
  2. Sprinkle the shredded cheese over the warm chicken in the skillet. Stir gently to combine until the cheese starts to melt.
  3. In another pan or microwave, warm the taco shells to your liking.
  4. When your shells are ready, fill each with a generous portion of the cheesy chicken mixture.
  5. Add diced tomatoes, bell peppers, olives, and a dollop of sour cream on top.
  6. Finish off with freshly chopped cilantro before serving for an extra touch of flavor.

Notes

Customize toppings to your preference. For less sogginess, warm soft taco shells just enough to be pliable. Experiment with different cheeses for added flavor.
