Ingredients
  

Soup Base
  • 4 medium-sized russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth (or chicken broth)
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese Freshly grated cheese melts better.
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • Fresh herbs for garnish (optional)

Method
 

Preparation
  1. In a large pot, melt butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the diced potatoes and dried thyme to the pot. Pour in the vegetable broth, seasoning it generously with salt and pepper.
  4. Bring the mixture to a boil over high heat, then reduce to a simmer. Cook for about 15-20 minutes, or until the potatoes are fork-tender.
  5. Remove the pot from heat. Use an immersion blender (or carefully transfer the mixture to a blender) to puree the soup until smooth. If you prefer a chunkier texture, just blend half of it.
  6. Stir in the heavy cream and shredded cheddar cheese, allowing it to melt into the soup. Make sure to adjust seasoning based on your preference.
  7. Ladle the warm soup into bowls, then sprinkle with fresh herbs if desired. Serve immediately and enjoy the flavors!

Notes

To elevate your soup, use freshly grated cheese instead of pre-shredded. Consider adding cooked bacon bits or sautéed mushrooms for added texture and flavor. Let it sit for a few hours for deeper flavors.
