For the cabbage
  • 1 head cabbage Cut into wedges
  • 2 tablespoons olive oil For drizzling
  • to taste salt
  • to taste pepper
Optional toppings
  • to drizzle balsamic vinegar For added flavor
  • to drizzle lemon juice For added zing

Method
 

Preparation
  1. Start by slicing a head of cabbage into wedges, about 1-inch thick.
  2. Drizzle the wedges lightly with olive oil and sprinkle with salt and pepper. Massage the seasonings into the cabbage.
Cooking
  1. Preheat your grill or a large skillet over medium-high heat. Place the cabbage wedges cut-side down and cook for 4-5 minutes until nicely charred.
  2. Carefully flip the wedges and cook for another 4-5 minutes until the outer leaves are blistered and tender.
Finishing Touches
  1. Drizzle with optional balsamic vinegar or lemon juice and serve immediately.

Notes

Store leftover Charred Cabbage in an airtight container in the refrigerator for up to 3 days or freeze for about 2 months. Reheat in a skillet over low heat with a touch of olive oil.
