  • 1 lb ground beef use lean ground beef for less fat
  • 1 can black beans, drained and rinsed for additional protein and fiber
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies adds flavor and moisture
  • 1 packet taco seasoning for seasoning the beef
  • 12 pieces corn tortillas can substitute with flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend) for a cheesy topping
  • 1/2 cup chopped onion cooked with the beef for flavor
  • 1/2 cup sour cream for creaminess between layers
  • 1/4 cup chopped fresh cilantro (optional) for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef along with the chopped onion over medium heat until cooked through, then drain any excess fat.
  3. Stir in the taco seasoning, black beans, corn, and diced tomatoes. Let the mixture simmer for about 5 minutes.
Assembly and Cooking
  1. In a baking dish, spread a thin layer of the meat mixture on the bottom.
  2. Layer with tortillas, followed by cheese and dollops of sour cream. Repeat layers until all ingredients are used, finishing with cheese on top.
  3. Cover the dish with aluminum foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.
  4. Let the casserole cool for a few minutes before garnishing with cilantro if desired.
  5. Slice and serve warm!

Notes

For variations, you can use ground turkey instead of beef or create a vegetarian version using only beans. Leftovers can be stored in an airtight container in the fridge for up to 3-4 days, or frozen for up to 3 months.
