Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef along with the chopped onion over medium heat until cooked through, then drain any excess fat.
- Stir in the taco seasoning, black beans, corn, and diced tomatoes. Let the mixture simmer for about 5 minutes.
Assembly and Cooking
- In a baking dish, spread a thin layer of the meat mixture on the bottom.
- Layer with tortillas, followed by cheese and dollops of sour cream. Repeat layers until all ingredients are used, finishing with cheese on top.
- Cover the dish with aluminum foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.
- Let the casserole cool for a few minutes before garnishing with cilantro if desired.
- Slice and serve warm!
Notes
For variations, you can use ground turkey instead of beef or create a vegetarian version using only beans. Leftovers can be stored in an airtight container in the fridge for up to 3-4 days, or frozen for up to 3 months.
