Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cardamom
  • ½ teaspoon salt
Wet Ingredients
  • ¾ cup apple butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
Optional Add-ins
  • nuts or raisins For added texture

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt until well combined.
  3. In a large bowl, mix the apple butter, granulated sugar, brown sugar, eggs, oil, and vanilla extract until smooth.
  4. Gradually stir the dry ingredients into the wet mixture just until combined. Be careful not to overmix!
  5. If you’d like, gently fold in any nuts or raisins for an extra texture boost.
  6. Pour the batter into the prepared loaf pan and smooth out the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Once baked, remove from the oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

For an even more flavorful kick, consider adding a splash of maple syrup or honey to the batter! You can switch out the apple butter for pumpkin puree for a different flavor. Store leftovers in an airtight container at room temperature for 2-3 days or freeze for up to 3 months.
