Preparation
- Wash the cauliflower thoroughly, then chop it into florets. Grate the florets until you have about 4 cups.
- In a large skillet over medium heat, add a splash of oil and sauté the grated cauliflower for about 3-5 minutes until it's tender. Allow it to cool slightly.
- In a mixing bowl, combine the sautéed cauliflower, breadcrumbs, Parmesan cheese, green onions, eggs, garlic powder, salt, and pepper. Mix well until everything is evenly incorporated.
- Using your hands, form the mixture into small patties, about 2-3 inches in diameter.
Cooking
- Heat oil in a large skillet over medium-high heat. Carefully place the patties in the skillet without overcrowding. Fry for about 3-4 minutes on each side or until golden brown.
- Remove the patties and place them on a paper towel-lined plate to absorb any excess oil.
- Serve hot with your favorite dipping sauce.
Notes
For a healthier option, bake the shaped patties on a lined baking sheet at 375°F (190°C) for 20-25 minutes, flipping halfway. Ensure the grated cauliflower is well-drained to avoid sogginess.
