Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, combine the flour, sugar, shredded coconut, baking powder, baking soda, and salt. Whisk together until well blended.
- In a separate bowl, mix the coconut milk, melted butter, eggs, and vanilla extract until smooth and combined.
- Gradually add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to over-mix!
Baking
- Pour the cake batter into the prepared pan and spread evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cooling & Serving
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cool, feel free to frost it or serve it plain with a sprinkle of toasted coconut.
Notes
Store your Catch a Husband Cake in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze slices wrapped in plastic wrap for up to 3 months. Reheat in the microwave for 10-15 seconds if desired.
