Ingredients
  

Dry Ingredients
  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
Wet Ingredients
  • 1 cup coconut milk
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, combine the flour, sugar, shredded coconut, baking powder, baking soda, and salt. Whisk together until well blended.
  3. In a separate bowl, mix the coconut milk, melted butter, eggs, and vanilla extract until smooth and combined.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to over-mix!
Baking
  1. Pour the cake batter into the prepared pan and spread evenly.
  2. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cooling & Serving
  1. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  2. Once cool, feel free to frost it or serve it plain with a sprinkle of toasted coconut.

Notes

Store your Catch a Husband Cake in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze slices wrapped in plastic wrap for up to 3 months. Reheat in the microwave for 10-15 seconds if desired.
