Ingredients

Vegetables
  • 6 pieces 6 carrots, peeled and sliced
  • 2 pieces 2 potatoes, peeled and diced
  • 1 pieces 1 yellow onion, diced
  • 3 cloves 3 garlic cloves, minced
Liquids and Seasonings
  • 4 cups 4 cups vegetable broth
  • 3 tbsp 3 tbsp olive oil
  • 1 tsp 1 tsp salt
  • 1/2 tsp 1/2 tsp black pepper
  • 1 tsp 1 tsp fresh thyme leaves

Method

Cooking
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and the onions are translucent, about 3-5 minutes.
  2. Toss in the sliced carrots and diced potatoes. Stir to combine and let them soften slightly, approximately 5 minutes.
  3. Add the vegetable broth, salt, black pepper, and thyme to the pot. Bring the mixture to a gentle boil.
  4. Reduce the heat and let it simmer for 20 minutes, or until the vegetables are tender.
  5. Once cooked, carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth. Taste and adjust seasoning if needed.
  6. Ladle into bowls, and feel free to garnish with your favorite toppings like yogurt or herbs. Enjoy the warm embrace of your comforting soup!

Notes

You can substitute sweet potatoes for regular potatoes for a sweeter taste, or add a splash of coconut milk for extra creaminess. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat on low heat, adding vegetable broth or water if necessary.
